Eating seafood is part of a healthy diet. Since we are living in a health and weight conscious society find foods that are high in beneficial proteins and low on saturated fats are quite important. The health benefits of seafood can be the lowering of cholesterol, lowering the risk of heart disease, lowering the risk of stroke, and building muscle.

It is easily apparent to see the effects of a high seafood diet when visiting a coastal community. In general these people live longer healthier lives. Fish and seafood with higher protein can prevent weight gain naturally, and it is easier to digest. It is a natural and easily obtainable food source in some areas making is a good alternative for red meat or poultry.

Omega 3

The essential oil in seafood is Omega 3; this can be found in fatty fish like tuna, salmon, and sardines. These have high levels of two kinds of Omega 3 fatty acids are eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA). It is recommended by physicians to have at least two portions in a week. They keep the heart healthy and help to prevent future cardiovascular disease and lower blood pressure. There is also evidence that fish can help prevent and possible alleviate some mood disorders, making it not only heart healthy but brain food too.

White fleshed fish, in particular, is lower in fat than any other source of animal protein, and oilier fish contain substantial quantities of omega 3s or the “good” fats in a diet plan. Fish does not contain the “bad” fats, omega 6 fatty acids, which are commonly found in red meat.

The high content of poly unsaturated fatty acids in seafood lowers serum cholesterol levels. Omega 3 fatty acids change the critical balance of certain blood components called lipoproteins, reducing low density lipoproteins and very low density lipoproteins that deposit cholesterol along the artery walls. Fish is low in saturated fat and provides the body with essential vitamins and minerals, such as, vitamins A, B, and D; zinc, iron, and selenium.

Dietary Advantages

Seafood can go a long way toward helping consumers achieve dietary goals. Most shellfish are low in fat, with a total composition of less the 5% fat; many varieties have less than 1% fat. Thus, with such a small amount of total fat, most seafood provides only 190 calories for a 3 ounce serving, cooked. But for a healthier choice, go for the poached, baked, or grilled fish, rather than fried. Fried fish is much higher in fat, especially if it is cook in a batter. This does not mean you can’t enjoy the occasional fish and chips; it is just healthier not to counteract the good oils with the bad.

Decorating A Cake With Scenery

One of the terrific ways to decorate a cake is with scenery. This can be achieved systematically as will be shown. The cake is first iced in a thin layer of buttercream and then poured with a lukewarm fondant. Before painting the scene, the cake should dry for one hour. Scenery painting in icings can be practiced on corrugated cardboard circles before attempting an actual cake scene.

A thinned down boiled icing and vegetable paste colors are used for this type of painted cake top. In painting a scene such as the boat, clouds and land in background, a picture may be obtained and copied in the following manner:

With a brush approximately 11/2 inches in diameter, a small amount of thinned down boiled icing is placed in the skyline area. Using the brush in a back and forth motion, the skyline is painted in.

With a tiny brush, place four or five small dots of blue paste color in the skyline area. Using a larger brush in a series of back and forth motions gives the skyline a blue variegated effect.

A large cone of white boiled icing with a 1/4 inch opening at the tip is used in a zig-zag motion at various intervals to obtain the cloud effect. Go over this cloud area with a clean brush to give it a smooth realistic look.

The water area is made by piping on a thinned down white boiled icing and then adding a few drops of blue and green paste color. Then, with the use of the large brush in a series of sweeping motions, create the greenish blue water effect. Use the deeper colors for the distant water. The ship may be put in with the fill-in method or it may be outlined and then painted on with the brush as illustrated.

Before putting in the clouds and after the blue is put on, a few dots of yellow, orange and a tint of violet may be brushed right above the horizon to give a sunset effect. After practicing a few simple scenes such as these, you will see that scenery painting is simple and fast once you have acquired the technique of using the brush properly.

For a Western scene, the sky can be painted in first as previously described. The mountains can then be piped on with a white and brown icing. Then, using a small brush, a few dots of deep colored icing can be put on the crevices and then smoothed nut with a larger brush. The cowboy and horse can be painted on with a very small brush in deeper colored boiled icing thinned down to the consistency of oil paints.

A Halloween scene can be painted in chocolate, orange and yellow. In a scene such as that, you must keep in mind the angle of the moon’s shadows. This cake can be bordered with individual shells using the No. 30 star tube and was overpiped in a deep color with a No. 3 tube using a question mark design.

Restaurants have a natural challenge that just comes with the territory: cleanliness and food safety. It seems not a day goes by without another horror story in the news about contaminated food products. Restaurants get routinely shut down by the Health Department. Even if things don’t get that bad for your business, all it takes is for a delivery person to see a puddle of muck on the floor in your kitchen for a bad word-of-mouth campaign to start circulating about your establishment. The media reports cases of food poisoning on a daily basis in spite of the fact that the fast food business is flourishing.

It seems fast food has become the American way and the public will go blindly forth ordering with the expectation that the food has been prepared in sanitary conditions. From bug problems to breeding bacteria, fast food restaurants especially have countless issues behind their counters. The rules are put into place and enforced by management, inspectors, the Food and Drug Administration, and so forth, are there as the minimum defense, and just the beginning. If you are the manager, awareness on your part isn’t enough; you have to be vigilant in ensuring that every employee knows and follows the rules to the letter.

One of the most common causes of food poisoning is bacteria transfer, which is due to food not being properly cooked or kept at the proper temperature. With such a demand for fast food, it is often all too easy for the employees to compromise their duties for the sake of saving time, and before they know it, they’ve served a meal that carries a nasty risk of food poisoning. The rules should be followed every time, not some of the time, as is unfortunately sometimes the case.

It is up to the management to see that the employees are properly doing their job, and, of course, effective management makes all of the difference in this endeavor. Close supervision is a necessity to help ensure that the work is being performed properly. Employees must care about their job and in return feel valued so that they will be more willing to perform their responsibilities correctly. Too often, factors like low pay, long hours, and little recognition makes employees more likely to burn out and do less than what is expected of them. Also, improper training of staff leads to improper fulfillment of job duties.

Unclean areas like counters or tables where food has been prepared can also spread bacteria and cause food poisoning. That is why it is important for employees to clean up after themselves and make sure that their work space is kept fastidiously clean. Also, food containers that haven’t been properly washed and stock that hasn’t been properly rotated are havens for bacteria.

Employees who don’t wash their hands before returning to their work station can unknowingly spread bacteria and other diseases. That is why it is of the utmost importance that employees wash their hands and also why every fast food restaurant should have at least one sink designated for hand washing only, with properly posted instructions, and including the necessary soap, paper towels. Wearing gloves when in contact with food helps as added protection, but even gloves can touch unclean surfaces just like hands can, so they need to be changed after coming into contact with unsanitary surfaces and items.

Even pests can present a challenge to cleanliness in fast food working environments, so it is important that restaurants are regularly inspected and treated for pests. No one wants an unwelcome visitor in their food, but it does happen more than we’d like to think. If an employee witnesses any pest making contact with the food, the entire amount of food in the container should be discarded.

Hair nets are a good idea for keeping stray hairs and dander out of food. Hats are more often the rule, but less effective in preventing hairs and dander from getting into the food. Wearing long hair tied back in a ponytail or braid is a must. And while we’re at it, today’s generation does need to be made aware that the extreme fashion statements are out of place in a professional kitchen. There are many work environments where dreadlocks, mohawks, and afros present no problem, but the kitchen is not one of them.

A fast food kitchen is set up to be convenient, but not always easy to clean. Every establishment should go above and beyond the norm to ensure that food is properly handled. Customers, before ordering their next meal at your restaurant, are these days taking a close look at the employees and the environment if they can. They may not be able to spot what goes on behind the scenes, but they trust their instincts for what they are able to observe.

This is one more reason why it’s better not to understaff. Ensure that your expectations of your employees are reasonable, and hold regular training programs. Even taking a few hours out of a day between meal times to conduct a food safety drill, involving the whole team, will go a long way to promoting healthy practices in your kitchen. Dropping in for a spot check every now and then will also be effective. To prevent your employees from resenting your surprise inspection, show up ready to help out for an hour or so during the shift. You will have an opportunity to set a good example, as well as boost morale by showing the staff that you can work beside them as equals.

Carrot juice has a number of health benefits. The carrot provides what is certainly the most important basic juice. The yellow color is due to carotene. The carrot is recorded as being used in medicine by the early Greeks and has been cherished ever since. Its juice is one of the most delicious and healthful, and alone or in combinations should be in every daily diet providing, as it does, the essential vitamin A, without the saturated fats with which this vitamin is associated in eggs and butter.

FROSTED CHRISTMAS BROWNIE

Serving Size: 12

Ingredients for Brownie:

~ 1-1/2 Cups Sugar
~ 1-1/2 Teaspoons Vanilla Extract
~ 1/2 Cup Cocoa
~ 1/2 Teaspoon Baking Powder
~ 1/4 Teaspoon Salt
~ 3 Large Eggs
~ 3/4 Cup All-Purpose Flour
~ 3/4 Cup Margarine — Melted
~ 6 Each Red M&MS Plain Chocolate Candy
~ Green Tube of Frosting (Piping Jel)

Ingredients for Butter Cream Frosting:

~ 3 Tablespoons Margarine or Butter — Softened
~ 2 Cups Powdered Sugar — Sifted
~ 3 Tablespoons More or Less Milk
~ 1/2 Teaspoon Vanilla Extract

Here are the instructions:

For the cake:

Preheat oven to 350 degrees. Line up 12-inch pizza pan with aluminum foil. Stir together margarine, sugar and vanilla in medium bowl. Add the 3 large eggs. Beat well with spoon.

Mix baking powder, flour, cocoa and salt. Slowly add to egg mixture, stirring until well combined Spread butter in prepared pan. Bake around 22 minutes or until you see the top springs back when touched lightly in center. Cool in pan on wire rack.

Trim off the edges that may have gone over the side of the pan. If desired, remove brownie from pan. Unwrap foil, or serve in pan. Spread frosting over top. Sketch holly leaves on frosted brownie and put red candies in proper place so that they look like holly berries.

For frosting:

Beat margarine in a small bowl. Slowly add powdered sugar, milk, and vanilla. Beat until it becomes consistent.

CHRISTMAS CREAM CAKE

Serving Size: 10

Ingredients for Cake:

~ 1 Cup Buttermilk
~ 1 Cup Coconut
~ 1 Cup Shortening
~ 1 Cup Walnuts; chopped
~ 1 Stick butter or marg (1/2 c)
~ 1 Tablespoon Vanilla
~ 1 Teaspoon Baking powder
~ 1 Teaspoon Baking soda
~ 1/2 Teaspoon Salt
~ 2 cups Flour
~ 2 Cups Sugar
~ 5 Eggs; separated

Ingredients for Icing:

~ 1 Box confectioners’ sugar
~ 1 Cup Maraschino cherries
~ 1 Packet (8 oz) cream cheese; soften
~ 1/2 Cup Butter or margarine; soften

Instructions for the Cake:

Preheat oven to 350 degrees. Cut waxed paper to fit the bottom of three 9-inch cake pans. Grease lightly and flour the paper. Beat the egg whites well until they form peaks in a small bowl and then it set aside.

Cream together the butter and the shortening then the sugar, egg yolks and vanilla in a larger bowl. Add the baking powder, salt, buttermil flour and baking soda. Beat until well mixed.

Add the nuts and coconut and then stir thoroughly. Carefully fold in the beaten egg whites. Spread butter into the prepared pans. Bake in preheated 350 degree oven for 25 minutes.

Before removing the pans let cool in pan for 10 minutes. Cool thoroughly before making the icing.

Instructions for the Cream:

The fist things that you should do is to drain, rinse and chop the maraschino cherries. Set them aside. Combine the cream cheese, confectioners’ sugar, and butter. Cream together thoroughly until smooth. Add cherries, mix well and use to frost the cake.

A Brief History About MandMs

Some parents kick their kids out of the house. Frank Mars kicked his son out of the country.

In the beginning, there was Franklin Mars, who started a small candy company in Tacoma, Washington, in 1911. In 1923, Mars, by then in Minneapolis, Minnesota, invented the Milky Way candy bar, which became a national hit and was soon followed by his equally successful Three Musketeers and Snickers bars.

By 1928, Mars’ son, Forrest, had graduated from Yale and joined the family business. But Forrest and his father did not get along, and finally the elder Mars presented Forrest with a proposition he couldn’t refuse: take the recipe and foreign rights to the Milky Way bar and leave the country. Forrest skedaddled to England and started his own candy company, churning out Milky Ways for an appreciative British public. As a sideline, he also started England’s first pet food company, replacing the table scraps on which British pets had, until then, subsisted.

In 1939, as World War II gathered steam in Europe, Forrest Mars returned to the United States, bringing with him the American rights to a British candy called Smarties, small circular tablets of chocolate coated in a shell of hard candy. To sell his new product, Mars went into partnership with R. Bruce Murrie, who just happened to be the adopted son of chocolate magnate Milton Hershey. Unfortunately, there already was candy named Smarties in the market in the United States, a small, tart confection sold in a roll, so Mars and Murrie needed a new name. In renaming Smarties for the American market, Mars simply combined his last initial with that of his partner, Murrie, and “M&Ms” was born.

Originally sold in paper tubes, M&Ms were an instant hit, especially because they didn’t melt during the summer when candy sales traditionally slumped, due to their “meltproof” hard candy shell. That shell also made M&Ms a natural choice for the U.S. Army to issue to its soldiers as part of standard rations during the war, and in 1954 Mars adopted the slogan “The milk chocolate melts in your mouth-not in your hand,” which is still used today.

After his father’s death in 1934, Forrest fought a long legal battle to take control of Mars, Inc., finally succeeding in 1962. Today Mars manufactures M&Ms, Milky Way, Snickers, Three Musketeers, and other candy as well as Uncle Ben’s Rice (which Forrest Mars perfected), and Kal Kan and Pedigree pet foods. Kicking his son out of the country may have been the best business decision Frank Mars ever made.

Make sure your coffee maker is clean because it makes a real difference in the taste of your coffee. Run water and vinegar through your coffee maker once a month. Make sure you run clean water through to remove all the vinegar and smell. When making gourmet coffee, use approximately two heaping tablespoons per six ounces of clean, filtered water. This gives you a starting point. Now adjust the amount of coffee until you have the strength you enjoy. Buy your gourmet coffee beans from reputable companies, as it does a difference.

Since the 1990’s, specialty gourmet coffee keeps getting more popular and is now one of the fastest growing markets in the world. Regular coffee is fine but gourmet coffee is fantastic and do not forget the flavored gourmet coffee. There is definitely something for everyone’s taste.
