A Good Low Calorie Chocolate Chip Muffins Recipe

Is there really a good low calorie chocolate chip muffins recipe? Here’s one with the added benefit of fragrant orange.

Chocolate Chip Orange Muffins - Low Fat

An old-fashioned recipe, slightly modified. 331 calories, 6 grams of fat, 1 mg of cholesterol…and good!!

1 cup all-purpose flour
3/4 cup whole-wheat flour
3/4 cup sugar
1 tablespoon baking powder
2 teaspoons finely shredded orange rind
2 egg whites
2/3 cup buttermilk
1/3 cup unsweetened applesauce
1/2 cup chocolate chips

6 servings

30 minutes 10 mins prep

1. Preheat oven to 400 degrees.
2. Spray 6 large, 3″ muffin cups with no-stick spray and set aside.
3. In large bowl mix all dry ingrediants, including orange peel.
4. In small bowl, beat egg whites until foamy. Stire in the buttermilk and applesauce.
5. Add buttermilk mixture to flour mixture and stir just until moistened.
6. Fold in chocolate chips.
7. Spoon batter into cups.
8. Bake 20 to 22 minutes.
9. Cool in cups 5 minutes, then remove and cool on a wire rack.
10. To make standard sized muffins, spray 12 2 1/2″ muffin cups with no-stick spray and bake for 15 to 17 minutes. 166 calories, 3 grams of fat, o mg of cholesterol.

4 eggs
3 cups flour 2 cup sugar
1 cup canola oil
1/2 tsp. cinnamon
2 tsp baking soda
1/2 tsp salt
1 small can pumpkin, about 15 oz.
1 12-oz. package semi-sweet chocolate chips, mini-size preferred Preheat oven to 350 degrees. Beat eggs and sugar. Mix in rest of the ingredients. Spray muffin pans with non-stick cooking spray. Fill each section 3/4 full. Bake in pre heated oven approximately 20 minutes or until lightly browned. Makes about 24 medium muffins.

Pumpkin Chocolate Chip Muffins:

12 Regular or 48 miniature
muffins
Make one or two days ahead
for best flavor.
1/2 c (1 1/4 ounces) sliced,unblanched
Almonds
1 2/3 c All-purpose flour
1 c Granulated sugar
1 tb Pumpkin pie spice
1 ts baking soda
1/4 ts baking powder
1/4 ts salt
2 lg Eggs
1 c Plain pumpkin (half of a
1 lb Can)
1/2 c (1 stick) butter, melted
1 c (6 ounces) chocolate chips

Heat oven to 350 F. Put almonds on a baking sheet pie pan and bake about 5 minutes, just until lightly browned; watch carefully so almonds don’t burn. (You can also toast them in a toaster oven.) Slide almonds off the baking sheet so they cool quickly.

Grease muffin cups, or use foil or paper baking cups.

Thoroughly mix flour, sugar, pie spice, baking soda, baking powder, and salt in a large bowl.

Break eggs into another bowl. Add pumpkin and butter, and whisk until well blended. Stir in chocolate chips and almonds. Pour over dry ingredients and fold in with a rubber spatula just until dry ingredients are moistened.

Scoop batter evenly into muffin cups. Bake 20 to 25 minutes, or until puffed and springy to the touch in the center. Turn out onto a rack to cool. Wrap in a plastic bag and keep for 1 or 2 days. Reheat before serving.

Chocolate Pudding:

Reserve one gill of milk from a quart, and put the remainder on the fire in a double-boiler. Mix three tablespoonfuls of cornstarch with the cold milk.

Beat two eggs with half a cupful of powdered sugar and half a teaspoonful of salt. Add this to the cornstarch and milk, and stir into the boiling milk, beating well for a minute. Shave fine two ounces of Walter Baker & Co.’s Premium No. 1 Chocolate, and put it into a small pan with four tablespoonfuls of sugar and two of boiling water.

Stir over a hot fire until smooth and glossy; then beat into the hot pudding. Cook the pudding in all ten minutes, counting from the time the eggs and cornstarch are added. Serve cold with powdered sugar and cream.

This pudding can be poured while hot into little cups which have been rinsed in cold water. At serving time turn out on a flat dish, making a circle, and fill the center of the dish with whipped cream flavored with sugar and vanilla.

The eggs may be omitted, in which case use one more tablespoonful of cornstarch.

How Cooling Water Devices Work

What are water coolers? They are quite simply, a device for cooling and dispensing drinking water. However, different types of coolers have evolved depending on various factors such as where to position it, whether it is for domestic or commercial use, and the differing quality of water required amongst other things.

In the 20th century, when the Western world professes to have perfectly drinkable tap water the question is asked, where did the idea of water coolers come from? The whole idea started during the 1920’s and 1930’s in America when the skyscraper building began. It was difficult in those days to pipe water to the upper floors so the unit with a bottle on top was the viable alternative and the issues of delivery, storing and carrying bottles was not so important as it solved a problem. Today, it is still an option for some companies, depending on their requirements.

In the latter part of the 20th century, advanced filter technology saw the introduction of the plumbed in unit with a carbon filter installed. This meant that the system could be plumbed into the main water supply in commercial buildings, negating the need for carrying heavy bottles, the risk of running out after demanding usage, not to mention the storage, which in major cities can be calculated in square footage. The unit incorporates a carbon filter, which is useful in that it removes approximately 10% of contaminants from the drinking water, namely chlorine and fluoride.

Now there is more advanced technology available and at a competitive price. The latest technology for commercial and domestic use giving the best quality drinking water is using the reverse osmosis process. The water coolers have installed in the unit, a reverse osmosis membrane that works alongside the carbon filter and a sediment filter, removing approximately 96% of contaminants from the municipal water supply.

As with any of the options, there are advantages and disadvantages but generally, the choice would be made depending on costs, maintenance, options for the building where the unit is to be installed and general feeling towards quality of water. Plumbed in water coolers is now the more popular choice for businesses as they involve less maintenance, are more cost effective and require less administration and storage. Companies refurbishing their offices now include the installation of them in their plans. This shows that their placement in the business environment is as essential as the positioning of the desks and computer stations.

The image of the water cooler became synonymous in the 1980’s with ‘cool’ advertising and was used as a prop in many Hollywood films. It was supposed to signify aspiration and affluence in a successful environment. In the present day, its image is synonymous with purity, hydration and health with advertising cashing in on images of snowcapped mountains, rivers running through fjords, clear blue skies and images of the sea with crashing waves on deserted beaches.

With health and hydration regularly featuring in the news, the business of water coolers is a growing one and as the marketing gets more creative and people demand better quality water, the industry will continue to grow.

I know of no one that has eaten chocolate and not just absolutely loved it. There are probably some exceptions, but I am not aware of them. This is especially true of chocolate bars which come in so many varieties these days there is surely something for everyone. When you consider that you can get chocolate bars with fruit, marshmallows, nuts, caramel and more there is hardly another confection that has so many diverse choices.

In the early 1800s the chocolate bar was introduced to the masses and by the early 1900s it exploded in popularity with worldwide appeal that continues to increase and has never slowed down. Many of the chocolate bars on the market now are still made with the same recipe as those of over 100 years ago. It is almost impossible to believe that until right after the Second World War these could be bought for only five cents.

Even though there is an almost endless variety of different types of chocolate bars manufactured now there are a handful of large companies that have a monopoly on the making and distribution of the confectionary delight. These larger companies are known for buying the smaller companies and then repackaging the products that they know are popular under their own name. The popularity of chocolate bars has led to some companies even adding protein to them to make them more attractive to the health conscious.

The chocolate bar that is probably most familiar to the majority of people is the Hershey’s chocolate bar which was brought to the market in the early 1900s by Milton Hershey of Pennsylvania. His recipe, though a closely guarded secret still consists of the process of choosing a dozen high quality beans which are then roasted depending on what type of bean it is. This process is followed by winnowing, grinding, conching, tempering, and then molding and packaging for shipment.

Due to the fact that some of the companies are in partnership with each other there are many of them that often use the same recipe to manufacture the chocolate with the only difference coming from the choice of cacao plant that they choose or from what area of the world they are in. Other companies have specific factories in different countries that handle certain aspects of the process.

Some of the needed substances that go into making a chocolate bar include cacao paste, cocoa butter, and sugar, as well as some optional ingredients such as vanilla, and lecithin. Regardless of the brand you go with you are sure to find a chocolate bar you will love.

How Rare Varietal Wines Are Changing The Australian Wine Industry

Forward thinking winemakers and grape growers are changing the face of the winemaking industry in Australia by bringing in new varieties of grapes and experimenting with them in new regions. The Australian wine industry has actually exploded onto the international scene in recent years with the success of making quality wines and offering them at very good prices, a feat that has led many to brand the wines down under as being lackluster.

Just as with the original pioneers of Australia, the innovative free spirit of the winemakers is causing a revolution in the country with a large assortment of grape varieties being experimented with.

Although there are well over a hundred varieties of wine grapes grown in Australia, the wine industry leans heavily on the classic varieties which are all of French origin. The whites are Chardonnay, Semillon, Riesling, and Sauvignon Blanc with the reds being Cabernet Sauvignon, Pinot Noir, Merlot, Shiraz, and Grenache. Another thirty varieties consisting of thirteen whites and seventeen reds also contribute and are considered second tier varietals according to the leading wine journalist-author James Halliday. The other seventy or so varieties are only used by about ten wine producers, but these are also the producers who are pushing the Australian Wine Industry into a new era.

Some of these are exotic grape varieties such as the Graciano from Spain, the Petit Manseng of France, Italy’s Lagrein, and the Russian Saperavi. In addition there are also grapes of Australian origin and mutations of others that are being experimented with.

The traditionalist vineyards and winemakers are aghast over the developments of some of these more aggressive winemakers and their use of such a wide assortment of varietals to develop new wines but the fact of the matter is that these new pioneers are introducing new wines that could very well birth the next premium Australian Wine.

These forward thinking winemakers are taking cast off and lesser thought of grapes and blending them into much desired wines. The Viognier variety underwent a similar process in Europe in the 1960s when it was nearly gone with just a few acres in the Rhone Valley and now it is all over France and California as well as being used by over a hundred winemakers in Australia alone.
